“A delicate blend of traditional Palestinian ingredients combined with distinct local flavours. Oregano and thyme provide the classic aromatic base along with toasted sesame, caraway and fennel for an earthy depth. To this we’ve added feijoa for its bright acidity and subtle astringency along with native kawakawa for its grassiness and a unique numbing tingle unlike any other za’atar. The result is a herbal, tangy, tingly and delicious- a true fusion flavour and tradition”

Our Shichimi Togarashi is a unique take on the Japanese spice blend with roasted sesame, locally grown hemp and toasted chilli for a rich, warm and nutty base. As well as the traditional kelp, ginger and szechuan, we included native horopito for wild bushy notes as well as both orange and lime for a vibrant, zesty finish that gives a bold, nuanced, and pleasantly bitter note perfect for soups, noodles, fish, grilled meats or vegetables.
