We are a family business of honey enthusiasts, supplying the best quality honeys chosen for their individual flavours. We look for bold and robust flavours, characteristic of the flowers the bees are foraging on.
Our signature variety is Zambian Organic Forest Honey, a rich, woody tasting honey from village beekeepers who I have worked with since 1983. At the same time I have been building up my own apiaries in the UK and now have 1,200 hives in Wales and England, located on farms chosen for the surrounding bee forage of diverse wildflowers. From our hives we harvest honey from the chalk downlands of Salisbury Plain, heather honey from the Welsh hills and ivy honey, the last crop the bees gather before hibernating through the winter months.
On my bee inspired journey of life I have met many memorable characters, producing special honey varieties, like honey from the barren hills of Andalucía and aromatic French lavender honey. Most of these characters are surprisingly ancient, maybe it’s the diet of honey and pollen, plus bee stings that keeps them active! Like the Zambian forest beekeepers who hang their bark hives high up in the forest canopy to catch passing swarms, then after a few months harvest the honey without the need for protective clothing. Instead they cultivate a gentle Zen like calm and work with the bees rather than against them. The honey they gather varies from year to year, like a fine wine, depending on weather patterns, sun spots and other unknown factors which stimulate one or other of their more than 500 tree species to flower at irregular intervals.
we do not blend, homogenise or pasteurise our honey. We want to let the customer enjoy the subtle variations of the diverse flowers the bees have foraged on and the intense flavours of the pollen suspended in the honey.SHOP NOW
