At the heart of this unique gin is the wild-foraged starflower, a striking blue flower harvested from our 1,500-acre rewilding project in Suffolk. This rare and beautiful botanical not only adds to the gin's distinctive and smooth flavour but also embodies our brand's mission to preserve and regenerate natural ecosystems. With its vibrant colour and delicate sweetness, the starflower plays a key role in shaping the gin’s signature taste - a perfect balance of lightness, smoothness, and subtle floral notes.

Crafting a Premium and Sustainable Gin: The Distillation Process
At MOATWOOD, we’ve chosen a single-shot distillation method - selected not only for its sustainability but also to enhance the premium nature of our gin. This single-shot process allows us to extract the purest, most refined flavours from our botanicals, resulting in a smoother, cleaner spirit that’s as environmentally responsible as it is exceptional.
What truly sets our gin apart is the combination of two distillation techniques. We begin with maceration for five core botanicals - juniper, ginger, orris root, coriander seed, and aloe - letting their bold, distinctive flavours steep deeply. Then, to capture the more delicate floral notes, we use vapour infusion for starflower, elderflower, and sweet orange. This dual extraction method creates a gin that is uniquely smooth and light, with layers of flavour that are both vibrant and harmonious.

One of our key partnerships is with SeaTrees, a pioneering organisation that works to reverse climate change by planting, protecting, and restoring coastal ecosystems. Through this partnership, we help support the regeneration of kelp forests, mangrove swamps, seagrass meadows, and coral reefs—all essential habitats that play a vital role in the health of our oceans.
